For the first time in our experiments, fermentation has not been completed, so we have a wine with sugar left. Could it be because of the excepional warm weather of the season? We are not sure about that. The method is the same as the previous vintages: vinification in old concrete tanks, no added yeasts, no added sulphites, no filtration. The aim is to better understand our grape varieties and their personality.
For this special wine, we choose crown caps, like the ones used in the champenoise before the degorgement. In this way, if a new spontaneous fermatation will start, the bottle will be able to keep the pressure.
